At Lasal del Varador, we bet on organic and local products to shape a quality gastronomic proposal. Our challenge is to achieve a committed and sustainable cuisine using what the region and territory offer us: Custody Fish and from the Arenys de Mar fish market, organic produce from local gardens, oil and rice from Ponent, organic beef from Girona, and wines and cavas from the region and other Catalan territories.
Seasonal Products
The menu and, especially, the daily menu take into account seasonal products to enjoy all the food richness that nature offers us at each moment and to taste the seasons in every dish.
Mediterranean Cuisine
We cook following healthy cuisine criteria with just the right amount of oil and sauces, without additives or concentrates. All dishes are cooked to order to guarantee maximum concentration of flavor and nutrients.
Dietary Options
At Lasal del Varador, we value and defend commitment to all dietary options. We have aimed to create a sensitive and open cuisine to different food realities, always trying to maintain the highest quality and honesty. That is why we offer vegetarian and vegan dishes, gluten-free products, dairy-free options, and others.
We strive for our cuisine to be inclusive and respectful, considering various intolerances and allergens. On the menu, you will find each of these concepts specified with explanatory symbols.

Slow Food is an international association, present in over 160 countries, dedicated to promoting eco-gastronomy. It advocates for a cuisine linked to the land and local, organic, and quality products. It believes that pleasure and enjoyment in food should be linked to a new sense of responsibility that considers balance with the ecosystem, the defense of biodiversity, and ethical commitment to producers.
