At Lasal del Varador we pursue the use of organic and local products in order to create a high-quality gastronomic offer. Our challenge is to attain a committed and sustainable cuisine using what our region offers us: fish from the Peix de Custòdia (Safeguarded Fish) project and from Arenys de Mar’s fish market, organic produce from local vegetable farms, oil and rice from the Ponent region, organic beef from Girona and wines and cavas from the region and other Catalan territories.
The menu, and especially the daily menu, take the seasonality of produce into consideration so that you are able to enjoy the rich abundance of food products that nature offers us at each moment and taste the seasons in each dish.
We cook using the principles of healthy cuisine with just the right amount of oil and sauces, without additives or concentrates. All of our dishes are cooked on demand to ensure the highest possible concentration of taste and nutrients.
Lasal del Varador values and defends a commitment to all dietary preferences. We have tried to create a kitchen that is open and sensitive to different dietary realities, always trying to keep the same quality and honesty. For that reason we offer vegetarian and vegan dishes, gluten-free and dairy-free products amongst other options.
We try to make sure that our kitchen is inclusive and respectful, taking different intolerances and allergies into account. You will be able to find each of these concepts on the menu, specified with explanatory symbols.
Slow food is an international association, present in more than 160 countries, that is dedicated to the promotion of eco-gastronomy. It defends a cuisine related to the land and local, organic and quality products. It understands that pleasure and enjoyment of food must be tied together with a new sense of responsibility which considers balance with the ecosystem, the defence of biodiversity and an ethical commitment to its producers.
Lasal del Varador has been recognised with the Biosphere certificate. This stamp certifies establishments that are committed to responsible and sustainable tourism and that guarantee the right balance between economic, sociocultural and environmental dimensions.
