Sustainability means generating the least waste possible. When undertaking our activities, we do our best not to generate any unnecessary waste. We separate what we cannot avoid making, using a strict recycling policy to minimize the environmental impact.
We prioritize the purchase of unpackaged goods in bulk in order to reduce the amount of unnecessary packaging. The majority of our suppliers are local, which allows us to minimize transportation, avoid the associated pollution and facilitate the return of containers to the supplier. We produce some products, such as yoghurt, for ourselves, thus saving significant amounts of packaging and avoiding the transportation of produce.
Some of the waste that we generate can be reused by our supplies and returned to us in the form of produce. Coffee grounds are reused by our egg supplier to grow worms for the hens; and corks are recycled by the wine cellar. We recycle organic waste; non-returnable glass bottles; paper, cardboard and wooden boxes, as well as cans, cartons and plastics.
